Living with gratitude and apprecition

Margret Rueffler, our founder and caretaker of Jiwa Damai agro-permaculture and retreat center and the Lagu Damai Bali Foundationdiscovered the art of permaculture 9 years ago. A transpersonal psychologist and therapist as well as an acupuncturist, it seemed a very organic move to expand from learning to love one’s Self, to uncover the deep love for the earth as a living being.

Permaculture is a wonderful way to ground this deep love for the earth through a hands on approach, coming from the heart, touching the soil, plants and aligning with nature. It offers an intelligent approach to live the values of gratitude, apprecition on a daily basis. Its intelligent design incorporates the expansion from the personal growth to the landscape, buildings, communities as well.

Finding like minded who share and wish to deepen the inner knowledge in combination with a healthier style of living, the food becoming again true nutrition, a gift from the earth in its natural abundance. Letting the earth and nature experience our deep love by treating them with respect and care. The health benefits of cacao

Cacao beans are seeds of the Theobroma cacao tree, a small evergreen tree grown in Mexico and South America. Cacao beans are roasted and ground to produce cocoa and, after further processing, are the basis of chocolate. When the beans are dried at low temperature, however, they are called raw cacao beans, which can be consumed whole, broken into pieces called nibs or ground to produce raw cocoa powder. Cacao beans are rich in natural antioxidant compounds with many health benefits.

Antioxidant Benefits

Antioxidants stabilize and ultimately destroy free radicals in your cells and tissues. These potentially damaging chemicals are natural by-products of metabolism. They also form when your body breaks down environmental toxins such as cigarette smoke and organic solvents. Free radicals can injure your cells by interfering with cell membranes, damaging DNA and altering other cell components. Over time, a buildup of free radicals can accelerate aging, contribute to vascular changes that lead to heart disease and raise your risk of developing cancer. In addition to removing free radicals, antioxidants also help decrease inflammation that can contribute to arthritis and other diseases, and they can prevent changes in platelets that might produce blood clots.

Cardiovascular Benefits

Flavonoid antioxidants in cacao have significant benefits for your cardiovascular system, according to Silvina Lotito, Ph.D., of the Linus Pauling Institute. She indicates that proanthocyanidin compounds in cocoa powder can help decrease oxidation of low-density lipoprotein, or LDL. Often called bad cholesterol, LDL is oxidized and then deposited in plaque. Plaque produces fat accumulations in arteries that can lead to atherosclerosis, or hardening of the arteries. Because cacao antioxidants block LDL oxidation, they can prevent plaque formation, improving circulation and lowering your risk of heart disease.

Cancer

The Linus Pauling Institute indicates that flavonoid antioxidants such as those found in cacao might interfere with the development of cancer. In one laboratory study published in 2002 in "Cancer Letters," anthocyanidins from cacao reduced the incidence of chemically induced pancreatic and breast cancer in laboratory animals. In a review of evidence from human subjects, published in 2009 in "Nutrition and Cancer," researchers concluded that compounds in cacao might prevent cancer or improve the outcome when the disease is already present. However, they state that more extensive studies with larger populations are needed to confirm this.

Christmas tree decorations

Our Balinese team and our international volunteers from France, Spain, Japan, Austria and Germany decorated our Christmas tree. 

We are hanging some lovely ornaments on the Frangipani tree at the entrance of the dining area. We hope the strong rains will leave our beautiful decorations hanging :) Merry Christmas!

North Bali Vineyards

Growing grapes in Bali has started at the beginning of the 20th Century but it is only a few decades ago, after multiple trials and errors, survival to parasites and other vine diseases, that the grapes were grown with satisfaction on a commercial scale and found in markets all over the archipelago. The final choice was a black table grape variety of French origin called 'Alphonse Lavallée'.

The vines in North Bali's vineyards are trained into an overhead trellis called Pergola, where the posts consist of small trees, which are regularly pruned. Besides keeping the workers cool, the pergola system reduces the risk of diseases and sunburn on the grapes, all contributing to a better fruit quality. 

The daily task of seeing the grapes protected from the elements is a full time operation and workers often live in houses built amongst the pergolas to take constant care in case of rain.

The crops have a surprisingly high quality and the grapes brought to the winery are certainly ranked as the best of the best.

Unique Bali Grapes

In our land in the hills of Bali, at Awan Damai, in Gunung Sari, we began to plant local Balinese grapes. about 500 pieces. The area is about 700 m in altitude and exposed to the North of the island.

However, since we are only a few degrees below the equator, the sun comes straight overhead and thegrapes are exposed to the tropical sunshine. At the moment we are feeding some of the vines with EM, effective micro organisms and the others are being left without. We wish to see if the nutrients and bacteria in the EM does make a difference in growth.

Our grapes are surrounded by miles and miles of clove trees which are harvested in September and dried. 

It is important to note that the tropical climate makes for the unique character  of grapes of in Bali, grapes are constantly harvested from evergreen vines and wine can be produced all year long instead of once a year. While vines usually require a dormant period of cooler months, the vines in tropicalBali produce grapes continuously in 120-day cycles. The varieties grown in Bali are the local Propolinggo Biru, the French table grape Alphonse-Lavallée and the Belgia.

Volunteering at Jiwa Damai

We are very grateful for the work of our volunteers at Jiwa Damai, in Bali. We appreciate their help and we hope that they also enjoy the beauty and the peace of our place. Here are the thoughts of ZaneLeadley on the volunteer program. 

"I was a volunteer at Jiwa Damai for two months from September - October 2015. Jiwa Damai is a special place that fosters learning, creativity, and inner growth. In addition to working in the garden, teaching English, and promoting Jiwa Damai's internships, I was fortunate enough to have the opportunity to work on my own aquaponics project. I am very grateful for the opportunity. The food is delicious, the people are fantastic and the place is idyllic."

Grapes and Health

Grapes are a natural source of beneficial antioxidants and other polyphenols. Current research suggests that grapes may help maintain a healthy heart, and may also help to defend your cells against a number of age-related illnesses. Scientists are also working to uncover more links between grapes and eye health, brain health, joint health, and more. At just 90 calories per 3/4 cup serving, grapes are a sensible, delicious snack with no fat or cholesterol

According to research from the University of Connecticut, funded by the California Table Grape Commission, eating grapes may help protect heart health in men with metabolic syndrome. In the study, men with metabolic syndrome who consumed grapes lowered their key risk factors for heart disease.

Metabolic syndrome is a cluster of conditions that occur together - high blood pressure, high blood sugar, excess abdominal fat and increased blood triglycerides - significantly increasing the risk for heart disease, stroke and diabetes.

Eating a variety of grapes may contribute to heart health by:

  • Promoting healthy blood flow
  • Reducing oxidative stress
  • Improving blood lipids
  • Decreasing inflammation

Creamy Grape Salad with Candied Walnuts

Since we started growing grapes at Awan Damai, we started looking for recipes with these ingrediends.

INGREDIENTS FOR CANDIED WALNUTS

  • 1/2 cup chopped walnuts
  • 2 teaspoons water
  • 1 tablespoon light brown sugar
  • Pinch of salt

GRAPE SALAD

  • 1/2 cup reduced-fat sour cream
  • 4 ounces reduced-fat cream cheese (Neufchâtel) at room temperature
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract
  • 6 cups seedless grapes, preferably red and green (about 2 pounds)

PREPARATION
Line a small baking pan with parchment paper or foil; coat with cooking spray. Preheat oven to 400°F

Toss walnuts in a bowl with water. Sprinkle with brown sugar and salt; toss to coat well. Transfer to the prepared pan. Bake until the sugar is melted and the nuts are barely starting to brown, 6 to 8 minutes. Cool in the pan until the sugar hardens, about 6 minutes.

To prepare salad: Meanwhile, combine sour cream, cream cheese, honey and vanilla in a food processor and puree until smooth and creamy. Transfer to a large bowl. Add grapes and gently stir to combine. Transfer to a serving dish. Crumble the candied walnuts on top just before serving.
